  1. The initial simmer: Bring the liquid to a lively boil and let it cook uncovered for 8 to 10 minutes. The liquid will gradually reduce, and the rice grains will begin to peek through the surface.
  2. Assemble with poise: Reduce the heat to low. Artfully arrange the seared prawns, steamed mussels, and clams on top of the rice, pressing them gently into the surface. Let it cook undisturbed for another 8 to 10 minutes, allowing the seafood to gently warm through and absorb the elegant, warm fragrance of the saffron without overcooking.
  3. The Socarrat finale: During the final 2 minutes of cooking, turn the heat up to medium-high. Listen closely: you will hear a gentle crackling sound, and a rich, toasted aroma will rise from the pan. This is the creation of the socarrat—the coveted, caramelized rice crust at the bottom of the pan. Turn off the heat immediately.

The Resting Ritual & Presentation

  1. The rest: Cover the entire paella pan with a clean, damp kitchen towel or a large sheet of foil. Let it rest undisturbed for 5 minutes before serving. This crucial pause allows the residual steam to settle, ensuring the rice achieves its perfect, non-sticky final texture.
  2. The presentation: Uncover the pan right at the table to let your guests feast with their eyes first. Garnish with a vibrant, generous shower of finely chopped flat-leaf parsley and surround the pan with fresh lemon wedges for that indispensable splash of Mediterranean acidity.
