- 2 garlic cloves, minced
- 2 tbsp extra virgin olive oil
- 2 tbsp (30 ml) dry white wine for deglazing
- Fine salt and black pepper, to taste
For the Light Béchamel Sauce (butter-free):
- ¾ cup + 1 tbsp (100 g) all-purpose flour
- 4 ¼ cups (1000 ml) partly skimmed milk, warmed
- 1 pinch of ground nutmeg
- Fine salt, to taste
For the Garnish:
- ¼ cup (25 g) Parmigiano Reggiano, freshly grated
- 1 handful of fresh flat-leaf parsley, finely chopped

Slice them into small, even pieces.
- Sauté the aromatics: Heat the extra virgin olive oil in a wide non-stick skillet over medium heat. Add the minced garlic and sauté until fragrant and lightly golden.
- Cook and deglaze: Add the sliced mushrooms to the skillet. Cook them over low heat for about 5 to 7 minutes until they release their liquid and it completely evaporates, allowing their flavor to turn deep and aromatic.
- Finish the filling: Pour in the dry white wine to deglaze the pan. Once the alcohol has fully evaporated, season with two pinches of fine salt and black pepper. Sauté for a few more minutes, then remove from heat and discard the garlic clove if left whole.

- Whisk the base: In a medium saucepan, gently warm the partly skimmed milk over medium-low heat. Slowly add the sifted all-purpose flour into the milk, whisking vigorously with a hand whisk to completely dissolve the flour and prevent any lumps from forming.
- Thicken and season: Cook the sauce over medium heat, stirring continuously with your hand whisk, until it thickens into a rich, smooth, and silky consistency that beautifully coats the back of a spoon. Season with two pinches of ground nutmeg and fine salt, then remove from heat. Note: this béchamel is intentionally butter-free — the flour quantity compensates for the missing fat, keeping the sauce light and delicate.
Assemble and Bake
- Preheat the oven: Preheat your conventional oven to 375°F (190°C).
- Prepare the baking dish: Spread a thin layer of the smooth béchamel sauce across the bottom of a baking dish to create an elegant base.
- Stuff the crêpes: Take each crêpe and place one to two tablespoons of the savory mushroom filling in the center (be sure to reserve a generous portion of mushrooms for the final top layer). Fold the crêpes into quarters (wallet-style) and arrange them neatly in the baking dish, side by side.
