- 3–4 fresh bay leaves
- 4 tbsp (60 g) Grana Padano cheese, finely grated
- 1 tbsp premium extra virgin olive oil
- Freshly cracked black pepper, to taste

- 7 oz (200 g) fresh snow peas, trimmed (frozen works fine too)
- 1 shallot, finely sliced
- 2 tbsp extra virgin olive oil
- Red chili flakes (or ground chili), to taste
- Fine sea salt, to taste

Marinating the Chicken & Preparing the Snow Peas
- Marinate the chicken: Place the chicken breasts in a large, clean mixing bowl. Grate the garlic cloves and gently massage them onto the meat, then dust lightly with a tiny pinch of ground cloves. Keep it subtle—a single pinch is more than enough to add mystery without overpowering. Cover with plastic wrap and let it rest in the refrigerator for 40 to 50 minutes.

- Boil the potatoes: Peel the yellow-fleshed potatoes and cut them into even-sized cubes to speed up cooking. Submerge them directly into the vegetable broth in a medium pot, adding the rinsed bay leaves. Bring to a boil and simmer for about 20 minutes. (If your broth is unsalted, add two teaspoons of coarse rock salt once it reaches a boil). Cook until the potatoes are tender enough to pierce effortlessly with a fork.
- Reserve the liquid: Carefully ladle out 1 to 2 cups of the warm cooking broth and set them aside—you will need this liquid to adjust the cream’s texture.

- The final touch: Once beautifully grilled and cooked through, season the chicken with two pinches of fine sea salt, a dust of black pepper, and a final, raw drizzle of extra virgin olive oil.
- Plate and serve: To serve, ladle two generous spoonfuls of the warm potato cream onto each plate. Gracefully arrange the grilled chicken breast (either whole or elegantly sliced) right on top. Complete the plate with a side of the lukewarm sautéed snow peas. Allow the dish to rest for 5 minutes before serving, allowing the juices to distribute and the flavors to sing.
